Zucchini Stacks


  • Zucchini, slicesd about ¼ inch thick
  • Salt and pepper, to taste
  • Spinach
  • Tomato, sliced about ¼ inch thick
  • Mozzarella (optional)


  • Preheat oven to 350 degrees. Season zucchini with salt and pepper and grill both sides until done but not soft. (You can use a frying pan with a little bit of olive oil if needed.) In a frying pan, wilt the spinach with a little olive oil. Place the zucchini on a parchment lined baking sheet, layer spinach next, then tomato, cheese if using, and then another slice of zucchini. Place in the oven for about 5 minutes. You could use other vegetables as well like cabbage and eggplant. Be creative.


If you are on the Diabetes plan you could also use a potato pancake on the outside.
