Ingredients

  • 1 zucchini
  • 2 cups vegetable broth
  • 2 tomatoes, diced
  • 1 white onion, wedged
  • 5 ounces vegan Boca crumbles
  • 1 Tbsp. cumin
  • 1 Tbsp. chili powder

Instructions

  • Dice up all veggies and pour into sauce pan (wait to add tomotoes)
  • Pour 1/2 cup- 1 cup broth into pan. Bring to boil
  • Heat crumbled in microwave until tender.
  • Mix crumbles into pan with seasonings and rest of broth.
  • Simmer 8-10 minutes.
