Tomato and Vegetable Gazpacho


  • 3-4 tomatoes, peeled and diced
  • 1 red pepper, diced
  • 1 cucumber, peeled and diced
  • 1/2 of a red onion, diced
  • 1 red pepper, diced
  • 1 tablespoon of minced garlic
  • 1 tablespoon of olive oil
  • 2-3 tablespoons of lemon juice
  • 2-3 bunches of fresh basil
  • 1 tablespoon hot sauce to taste
  • 2 cups of cold water
  • pinch of salt
  • pinch of pepper


  • Place the vegetables (including the basil) in a bowl with the hot sauce, olive oil and lemon. Mix, cover with plastic wrap and place in the fridge. Let it marinate for 15 minutes. Take out and remove the plastic wrap. Place the vegetables in a blender with one cup of the water and blend the ingredients together. Pour in a bowl add salt and pepper to taste. Add remaining water (less if too thin) and let chill in fridge for another 2-3 hours. Serve cold.
