Tomato and Cabbage Soup (Phase 1)

- 1/2 red onion
- 1 teaspoon coconut oil
- 1 cup vegetable broth
- 8 ounces canned diced tomatoes
- 1/2 cabbage head
- Cut red onion into 1/2" chunks and saute on med-high heat in 1 tsp of coconut oil.
- Cook until onion becomes soft. Add broth and diced tomatoes to the pot.
- Bring to a boil, then add cabbage (cut into wide strips).
- Stir and bring to a boil again.
- Turn off heat and let sit for 5 minutes. Serve.
