Vegetarian Week: Tofu

The popularity of tofu is ever growing and because is it low in fat and high in protein, many Liquid Amino Dieters use it as a protein substitute while on the program. Tofu has the ability to absorb marinades to deliver great taste, it can also be used as a solid base for cream cheese and ice cream.

You will notice a variety of products in the store from extra firm to silken, and some will have to be refrigerated while others can be stored on the shelf for a longer amount of time. But there are two main types of tofu: firm and soft. Firm tofu is great for a main entrée, and is the more feasible choice when cooking meals as it can be diced, marinated, and scrambled. Soft or silken tofu is commonly used for desserts, soups, sauces, smoothies, as it can give a creamy texture.

Here are some tips for those of you new to tofu:

  1. When you take the tofu out of the box, wrap the block in a paper towel and press firmly to remove excess water before cooking.
  2. Tofu can be marinated in soy sauce, lemon juice, or most any of the dressing found in our dressing recipe section.
  3. Tofu can be preserved for up to 5 months in the freezer.
  4. Tofu has a shelf life of 5 days when stored in the refrigerator. When refrigerating, you should store it in water and change the water daily.

    Tofu is also called a super food, its healthy and high in protein but it has no flavor; however, It does absorb the flavors of marinade or the foods its cooked with. That is what is so special about tofu. In order to achieve the proper taste, the water its packaged with needs to be pressed out. Purchase firm or extra firm tofu at your local grocery store and use a press like the EZ Tofu Press (available at Amazon) to press or dry the tofu out. This will allow the flavors to be absorbed when cooked or covered with a marinade. There are receipes everywhere on the internet as well as here. Remember to press and cook or press and freeze!
