Stuffed Bell Peppers


  • 4 bell peppers (any color)
  • 2 turkey breasts (cooked and cubed)
  • 1 C quinoa (cooked)
  • 3 egg whites
  • ½ C onion (chopped)
  • 2 T garlic (minced)
  • Salt, Italian seasoning and pepper to taste
  • 2 Roma Tomatoes (cubed)


  • Preheat oven to 200 degrees. Cut the tops off the peppers and remove the veins and seeds. In a bowl combine the other ingredients. Stuff each pepper with the mixture. Bake for 40 min. or until tender.
