Snickerdoodles (Phase 3)

Snickerdoodles (P3)
Ingredients
- 1/2 cup butter
- 1 1/2 cups almond flour/meal
- 1 tablespoon stevia to taste
- 1 egg
- 1/2 teaspoon vanilla
- 1/4 teaspoon baking soda
- 1/4 teaspoon cream of tartar
- 2 teaspoons Stevia
- 1 teaspoon cinnamon
Instructions
- Put butter, egg, vanilla in a mixing bowl and mix together incorporating well
- Sift together almond flour, 1 tablespoon stevia, baking soda, and cream of tartar
- Add to egg/butter mixture
- Mix well
- Cover and refrigerate for 1 hour
- In a small dish mix together remaining stevia and cinnamon
- Remove dough from fridge and roll into small balls (makes about 20)
- Roll balls in stevia/cinnamon mixture
- Place on ungreased cookie sheet
- Bake 350 for 12-15 minutes
