Meatless Reuben (P2)

  • 2 slices whole grain bread (or dark rye if you are closer to Phase 3)
  • 1/2 avocado, mashed
  • 1 Tbsp. mustard
  • 1/2 cup live sauerkraut (well drained)
  • 3 slices vegan bacon
  • A pinch of butter or olive oil
  • Optional Dressing for dipping:


  • Lightly coat pan with oil or butter
  • Cover both slices with mustard (cheese optional)
  • Place slices (mustard side up) in pan and cook until crispy
  • Remove and top with avocado and sauerkraut
  • You can dip this into the Ranch dressing or add dressing with mustard when cooking. Both are delicious.
