Mango Salsa (Phase 2 and Diabetes)


  • 1 large ripe mango, peeled, pitted, and diced
  • 1/2 red bell pepper, diced
  • 2 tablespoons minced red onion
  • 1 tablespoon chopped fresh cilantro
  • 1 jalapeno pepper, seeded and minced
  • 2 tablespoons lime juice
  • 1 tablespoon lemon juice
  • salt and pepper to taste


  • Combine all the ingredients, except the salt and pepper. Season to taste with salt and pepper. Keep in the refrigerator until ready to serve. The flavors will combine the more you leave it.
