This recipe makes 3 portions.


  • Eggplant
  • Zucchini
  • Beans- your choice
  • Bell pepper
  • Onion
  • Garlic
  • Tomatoes
  • Herbs
  • Olive Oil


  • Use 2-3 Tbsp tablespoons of olive oil to saute the onions, garlic, pepper, and zucchini.
  • Precook the eggplant in the microwave because otherwise it would soak up tons of olive oil, adding it after the other vegetables are cooked.
  • Then add the tomato and beans.


It makes about a 300 calorie meal with two veggie servings and a bean protein.
