Homemade Ratatouille (Phase 1)

This recipe makes 3 portions.
- Beans- your choice
- Bell pepper
- Olive Oil
- Use 2-3 Tbsp tablespoons of olive oil to saute the onions, garlic, pepper, and zucchini.
- Precook the eggplant in the microwave because otherwise it would soak up tons of olive oil, adding it after the other vegetables are cooked.
- Then add the tomato and beans.
It makes about a 300 calorie meal with two veggie servings and a bean protein.
