Grilled Cilantro Lime Shrimp Kabobs (Phase 1)

Cook Time: 5 minutes

Total Time: 20 minutes

Ingredients

  • 5 oz raw, peeled jumbo shrimp
  • 1 clove garlic, crushed
  • 1 large lime sliced very thin into rounds
  • 1 tablespoon extra virgin olive oil
  • 1/3 tsp kosher salt
  • 1/2 tsp ground cumin
  • 1 tablespoon fresh chopped cilantro
  • bamboo skewers (soaked in water)

Instructions

  • Heat the grill on medium heat
  • Use extra virgin olive oil to oil the grates
  • Season the shrimp with garlic, cumin, salt and 1/2 tablespoon of cilantro in a bowl
  • Using a pair of skewers start with shrimp and alternate shrimp and lime round until full, repeat on next pair
  • Grill the shimp, turning occationally until shrimp is cooked, about 1-2 minutes on each side
  • Top with remaining cilantro and fresh squeezed lemon juice

Notes

Top on a yummy bed of lettuce with some pico for a nice fiesta salad, or use as a wrap or taco, the possibilities are endless.
