Flounder with Cracked Pepper and Lemon

Ingredients
- 1 teaspoon extra virgin olive oil
- 1/3 teaspoon black peppercorns, crushed or very coarsely ground
- 1/8 teaspoon salt
- 1 ½ teaspoon grated lemon rind
- ½ clove garlic minced
- 5 oz boneless flounder fillet
- Extra virgin olive oil for pan
- Lemon slices
- Parsley sprigs
Instructions
- Preheat oven to 425
- Combine first 5 ingredients
- Place fillets on a small cookie sheet coated with extra virgin olive oil
- Rub spice mixture over fillet
- Bake for 8 minutes or until fish flakes easily when tined with a fork
- Garnish with lemon slices and sprigs of parsley
