Flounder with Cracked Pepper and Lemon

  • 1 teaspoon extra virgin olive oil
  • 1/3 teaspoon black peppercorns, crushed or very coarsely ground
  • 1/8 teaspoon salt
  • 1 ½ teaspoon grated lemon rind
  • ½ clove garlic minced
  • 5 oz boneless flounder fillet
  • Extra virgin olive oil for pan
  • Lemon slices
  • Parsley sprigs


  • Preheat oven to 425
  • Combine first 5 ingredients
  • Place fillets on a small cookie sheet coated with extra virgin olive oil
  • Rub spice mixture over fillet
  • Bake for 8 minutes or until fish flakes easily when tined with a fork
  • Garnish with lemon slices and sprigs of parsley
