Edamame Black Bean Salad (P1)

Ingredients

  • 1 Cup cooked black beans - rinsed
  • 1 Cup shelled edamame beans
  • 1 cup grape tomatoes halved
  • 1 green pepper diced
  • 1/2 cup chopped fresh cilantro
  • 1/2 cup diced red onion
  • Dressing
  • 1 tablespoon extra virgin olive oil
  • 2 cloves garlic, minced
  • 1 1/2 tablespoon lime juice
  • 1 1/2 tablespoon apple cider vinegar
  • 1/2 teaspoon sea salt
  • 1/4 teaspoon fresh ground pepper

Instructions

  • Combine beans, tomatoes, onions, cilantro, peppers and onions in a bowl.
  • Combine dressing ingredients in a separate bowl
  • Whisk dressing together
  • Drizzle over top of the bean salad
