Curried Vegetable Blend (Phase 1)

- ¼ cup cilantro
- 1 cup low sodium veggie broth
- 3 cloves of garlic, diced
- 1 Tbsp. ginger powder
- 1 can organic garbanzo beans, rinsed and drained**
- 2 large carrots, chopped
- 2 cups shredded green cabbage
- 1 cup diced onion
- 1 Tbsp. Olive oil
- 1 ½ tsp. curry powder
- A pinch of cayenne pepper and salt
- Sautee onion and seasonings until brown.
- Add in beans, ginger powder, cabbage, garlic, and carrots and cook for 3 minutes
- Mix in broth and reduce heat.
- Cover pan and let cook for 10-12 minutes
- Garnish with Cilantro
