Curried Vegetable Blend (P1)

Ingredients

  • ¼ cup cilantro
  • 1 cup low sodium veggie broth
  • 3 cloves of garlic, diced
  • 1 Tbsp. ginger powder
  • 1 can organic garbanzo beans, rinsed and drained**
  • 2 large carrots, chopped
  • 2 cups shredded green cabbage
  • 1 cup diced onion
  • 1 Tbsp. Olive oil
  • 1 ½ tsp. curry powder
  • A pinch of cayenne pepper and salt

Instructions

  • Sautee onion and seasonings until brown.
  • Add in beans, ginger powder, cabbage, garlic, and carrots and cook for 3 minutes
  • Mix in broth and reduce heat.
  • Cover pan and let cook for 10-12 minutes
  • Garnish with Cilantro

Notes

**Consider garbanzo beans a Caution Item and cut them out if weight loss stalls.
