Black Bean Avocado Salad (Phase 2, Diabetes Program)

Prep Time: 10 minutes

Yield: 4 servings

Serving Size: 1/2 cup

Delightfully easy summer salad.


  • 2 cups prepared black beans
  • 1/2 of a lime
  • 1/4 cup fresh cilantro
  • 2 small shallots, diced
  • 1/4 tablespoon extra virgin olive oil
  • 1/2 teaspoon ground cumin
  • Salt to taste (1/4 teaspoon or less should be good)
  • Fresh ground black pepper to taste
  • 1/2 large avocado cubed don't halve until ready to serve)


  • Rinse beans - set aside
  • In a bowl combine oil, lime juice, shallots, cilantro, and ground cumin
  • Toss dressing with beans
  • Salt and pepper to taste
  • Top with cubed avocado


This would be a great phase 1 recipe if you omit the avocado. Serve at room temperature. Remember, fresh ingredients are always best, so whenever possible, avoid canned foods including canned beans. Feel free to play with this and add additional vegetables like tomatoes and bell peppers.
