Beef Gravy (P1)

Prep Time: 10 minutes

Cook Time: 30 minutes

Total Time: 40 minutes

This makes 8 1/2 cup servings at 17 calories a half cup.


  • 4 cups stock- beef, chicken, vegetable
  • 1 onion , chopped thin
  • 1 cup mushrooms, sliced
  • 1 clove of garlic, pressed
  • 1 teaspoon tomato paste
  • Bay Leaf
  • Salt (to taste)
  • Pepper (to taste)
  • a pinch of thyme
  • 1 teaspoon Xanthan Gum


  • In a stock pot bring to boil all ingredients until onions are soft
  • Sprinkle the Xanthan gum in boiling liquid and whisk until thickened
  • Simmer for 20 minutes


I like to simmer it for at least an hour, but it’s ready to go after 20 min It will be clearer/ more translucent than traditional flour thickened gravy but the flavour and texture is there
