Alfredo Chicken and Vegetables (P1)

  • 5oz of chicken, cut into pieces
  • 1/4 cup of cottage cheese
  • 1-2 teaspoons ranch dressing seasoning mix - see recipe in dressing section
  • 2-3 tbsp of water
  • 2 cups of the approved vegetables, cooked


  • Puree cottage cheese, ranch dressing seasoning mix and water together - set aside
  • Cook chicken pieces until no longer pink
  • Add cottage cheese mixture and cooked vegetables to the pan
  • Simmer and let fluid reduce down. It will become creamy.
  • Serve immediately
